Summer - too hot season for hot dishes, so I suggest a recipe for a truly cool, refreshing and quite hearty dish - okroshka. This is a traditional dish of Russian and Ukrainian cuisine. Okroshka is a mixture of finely chopped vegetables of neutral taste: boiled potatoes, turnips, fresh cucumbers, rutabaga. Required spicy herbs: dill, parsley, celery, tarragon. By the way, okroshka is still meat and fish, only meat should be added 1: 1 in relation to vegetables. At the same time meat is used lean, very tender: meat of a piglet, turkeys. But the main thing is of course the liquid base of okroshka, it can be different: whey, diluted vinegar, beer, kefir, ayran, mineral water, tea mushroom, cucumber pickle and even tomato juice.
Ingredients:- Eggs chicken 3 pcs.
- Fresh dill 1 tbsp
- Sausages Vienna 5 pcs.
- Cucumber 2 pcs.
- Carrot 1 pc.
- Green onion 1 tbsp
- Cilantro fresh 1 tbsp
- Kefir 2 tbsp
- Potatoes 2 pcs.
- Canned peas 1 tbsp
- Beef flesh 200g
- 1 st water
- Step 1 First, we drain the water from the jar with peas. And immediately pour it into a bowl. There you can immediately place chopped onions, dill and coriander.
- Step 2 Next, cut the meat, I used beef sausages - they are less fatty for okroshki.
- Step 3 Finely minced the boiled eggs.
- Step 4 Finely chop the cubes of cooked carrots and potatoes.
- Step 5 All ingredients are placed in a bowl, where we already have peas and herbs. You can already feel the stunning smell of sliced ​​vegetables.
- Step 6 Next, dilute kefir with water in a separate bowl, mix thoroughly.
- Step 7 then add the liquid to our vegetables and mix.
- Step 8 Okroshka is ready. Well unless the recipe is not simple ?! Now you can enjoy a refreshing cold soup.
