Okroshka

Summer - too hot season for hot dishes, so I suggest a recipe for a truly cool, refreshing and quite hearty dish - okroshka. This is a traditional dish of Russian and Ukrainian cuisine. Okroshka is a mixture of finely chopped vegetables of neutral taste: boiled potatoes, turnips, fresh cucumbers, rutabaga. Required spicy herbs: dill, parsley, celery, tarragon. By the way, okroshka is still meat and fish, only meat should be added 1: 1 in relation to vegetables. At the same time meat is used lean, very tender: meat of a piglet, turkeys. But the main thing is of course the liquid base of okroshka, it can be different: whey, diluted vinegar, beer, kefir, ayran, mineral water, tea mushroom, cucumber pickle and even tomato juice.
