Cucumber, carrot and bell pepper peel and cut into small strips. Soak a sheet of rice paper in a shallow bowl with warm water for 5 to 10 seconds. Place the sheet on a wet towel on the work surface. Put 4 mint leaves and 4 leaves of cilantro into the center of the paper. Add 1 tablespoon chopped lettuce, 5 cucumber strips, 5 carrot strips, 5 strips of sweet pepper, 2 tablespoons of radish sprouts or pea shoots, 2 teaspoons of chopped mint and 2 teaspoons of chopped cilantro.
