Preheat the oven to 200 degrees. Season the lamb with salt and pepper. Heat the large frying pan over medium heat. Add 2 tablespoons oil. Add the lamb, fry until brown, 2 to 3 minutes on each side. Drain the fat. Put the frying pan in the oven, cook the lamb for 20 to 25 minutes. Leave to stand for 10 minutes. Meanwhile, make the sauce. Cut the peel from the orange with a knife and finely chop. You should get about 1/4 cup. Mix the zest, 1/3 cup of orange juice, lemon juice, parsley and the remaining 1/4 cup plus 2 tablespoons oil. Season with salt and pepper. Slice the lamb into slices and serve with sauce.
