Tomatoes for the winter I usually cooked tomatoes for this recipe. Rattled with spices, with basil, with carrot tops (it's like replacing dill and horseradish, it's very interesting). Now I roll up with onions, carrots and peppers. Even during cooking, you can hear how rich the fragrance is. The proportions are based on a per 2 liter jar. Tomatoes are desirable to take small ones to optimally fill the volume of the can. Depending on their size, it may take a little more or less. Salt and sugar take in tablespoons without a roller coaster. If you like more sharply, then you need to add hot pepper to taste.
Ingredients:- Tomatoes 800 g
- Pepper sweet 1 pc.
- Onions 1 pc.
- Carrot 1 pc.
- Salt 2 tbsp. l.
- Sugar 2 tbsp. l.
- Table vinegar 2 tbsp. l.
- Pepper black with peas 5 pcs.
- Fresh dill 5 g
- Bay leaf 1 pc.
- Garlic 1 clove
- Pepper fragrant 2 pcs.
- Step 1 Prepare the vegetables. Remove the stems from the tomatoes and rinse the fruits themselves. Pepper to wash, cut off the tip, cut the fruit itself in half along, remove seeds and pulp cut again in half. Peel the onions and cut them not very thinly. Carrots clean and cut arbitrarily.
- Step 2 Sterilize the jars and covers. I just sip a lot of boiling water. At the bottom of the jar, dill, peppers fragrant and black pot, slices of onions and carrots.
- Step 3 Then put a quarter of the pepper. You can put the pepper sideways, vertically.
- Step 4 On tomatoes, in the place where the peduncle was, make a couple of pricks with a toothpick to a depth of about 1 cm. This is necessary so that the tomatoes do not burst.
- Step 5 Put the tomatoes in the jar. Add the washed laurel leaf and the chopped garlic clove. Pour into the prepared cans boiling clean water, pour in portions, so that the bank does not burst. It is desirable that the bank itself stood on a wooden surface.
- Step 6 Allow to stand for 15 minutes, so that the tomatoes are warmed up well. Then use a special lid with holes to drain the water into a saucepan. Boil.
- Step 7 In the banks themselves put salt, sugar and vinegar. Pour again with boiling water and close. Wrap with cotton or woolen blankets (blankets or scarves). Leave for a day wrapped.
