Step-by-step recipe for making jam from figs: Step1: Wash the figs, dry with a paper towel. Step 2: Make punctures on the surface of each fetus with a needle. Step 3: In the enameled basin put the figs in one layer and fill it with sugar. Step 4: Covered with sugar, the figs are covered and left for 3 days (do not mix at all!). Step 5: After three days, put figs on medium heat, add liquor (brandy or rum), lemon juice and bring to a boil. Step 6: After the jam has boiled, immediately reduce the heat to a minimum. Then cook for 40 minutes. Step 7: Remove the preserves from the heat, cover and leave to infuse until the next day, without stirring. Step8: The next day bring the jam to a boil, remove the fire to a minimum and cook for another 30-40 minutes. Step 9: Cool the jam and pour over clean jars.
