For the preparation of jam it is better to take rowan after the first frost. The recipe is suitable for both red ashberry and black chokeberry. Preparation: Separate berries of mountain ash from twigs, put the berries in a bowl. Pour boiling water and let stand for 3-4 minutes. Then pour the mountain ash with cold running water and leave it soaked for 12-24 hours to remove the bitterness. Boil syrup from water and sugar. In the resulting sugar syrup lay out the mountain ash and let stand for 8-19 hours. Then cook the jam for 5-6 minutes, then remove from heat and let stand for 12-24 hours. Repeat heating and cooling 1-2 times more.
