- olive oil - 2 teaspoons
- Yellow onions - 1 Piece
- clove garlic - 1 piece
- carrots - 450 Grams
- yellow pepper - 1 piece
- cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- lentils - 1/2 cup
- chicken broth - 2 cups
- dried apricots - 3/4 Cups
- raisins - 1/4 cup
- fresh cilantro - 2 st. spoons
- fresh parsley - 2 items. spoons
Heat the olive oil in a saucepan over medium heat. Add the onion and garlic, fry until the onion is soft and transparent, about 5 minutes. Add carrot, pepper, cumin and ground coriander. Fry, stirring frequently until the pepper softens slightly, about 3 minutes. Add the lentils and chicken broth, cook over high heat, until the lentils become soft, from 15 to 17 minutes. Add dried apricots and continue to cook, stirring, 1 minute. Add raisins. Remove from heat, add cilantro and parsley.
