Preparing a salad with rocket salad Some time ago, it was only possible to read about the arugula in foreign recipes, and now this spicy herb is among the favorite among many who actively use a variety of greens in cooking. With the advent of spring, I do not want any more hearty multi-layered salads, but they beckon with their fresh taste and juiciness light green. I propose to try a delicate salad with arugula, from which I am delighted.
Ingredients:- Rucola 125 g
- Almond 2 tbsp. l.
- Raisin light 25 g
- Cheese hard 50g
- Olive oil 2 tbsp. l.
- Lemon juice 1 tsp.
- Salt 1 pinch
- Pepper black ground 1 pinch
- Step 1 For the salad we need the following ingredients: arugula, almonds, raisins, cheese, olive oil, lemon juice, salt and pepper.
- Step 2 Raisins pour hot water for 5 minutes to add to it softness. Then drain the water and drain it.
- Step 3 Pre-peel the almonds from the peel with thin petals.
- Step 4 Fry the almonds in a frying pan without adding oil to a light golden color.
- Step 5 Any hard cheese (ideally - Parmesan) is rubbed with thin petals. Effectively it looks like cutting with a special grater.
- Step 6 Prepare the sauce "Vinaigrette": mix olive oil with lemon juice, salt (optional) and freshly ground pepper. I do not use salt in this salad.
- Step 7 Dry my riccola, dry it, spread it into a plate, pour it with cooked sauce.
- Step 8 Sprinkle the raccoon with raisins and almonds.
- Step 9 Put the cheese petals on top and we can enjoy the delicious taste of this salad. Important: these salads must be served immediately after cooking, they should not stand.
