Since this fish is not cheap, the so-called fish waste is most often used. Especially delicious rassolnik obtained from salmon ridges, which still have a lot of pulp.
Ingredients:- Water 2 l

- Long grain rice 150 g
- Potatoes 3 pcs.
- Parsley root 1 pc.
- Pickled cucumbers 1 pc.
- Carrot 1 pc.
- Onions 1 pc.
- Vegetable seasoning 10 g

- Step 1 To prepare rassolnika you need to take salmon ridges, potatoes, onions, carrots, parsley root, pickled cucumber, rice, vegetable oil and vegetable seasoning (with salt).
- Step 2 Rinse thoroughly first in warm water (up to 40 ° C) to remove the starch, and then in hot water (to remove the fat that is released when storing the cereals).
- Step 3 Pour rice with plenty of hot water, boil until half cooked, put in a colander and rinse with hot water to remove mucus.
- Step 4 Fish ridges thoroughly wash, pour cold water (2 liters), bring to a boil, remove the foam and cook until meat is ready (about 30 minutes).
- Step 5 Remove the ridges from the broth, separate the flesh from them and remove the bones from it.
- Step 6 Cut the cucumbers into small pieces.
- Step 7 Put the cucumbers in a small saucepan, pour a small amount of fish broth (or water) and simmer on low heat until soft.
- Step 8 Peel potatoes and cut into small cubes.
- Step 9 Strain the broth, bring to a boil, put the potatoes into it and boil until soft.
- Step 10 Peel the onion and finely chop it.
- Step 11 Pour the onion into a frying pan with preheated oil and fry until lightly browned.
- Step 12 Carrots and parsley root should be cleaned and rubbed on a coarse grater or finely chopped.
- Step 13 Add the carrots and parsley to the onions.
