Beef tenderloin thoroughly rinsed. Instead of beef, you can use boar or venison. Do not skimp on meat - you need a really good cut, otherwise the steak "Diana" will not turn out as delicious as it should be. We cut beef scraps across the veins into medallions 3-4 cm thick. Each medallion is slightly beaten to a thickness of 1.5-2 cm. Sprinkle salt and pepper. Onion cut into thin half rings, chop the garlic or let it through the press. The rest of the ingredients are also recommended to have at hand - cooking will occur very quickly, so you need everything to be ready for use. In a frying pan, we heat the oil. In a hot pan put our beaten beef medallions. Meat should be perfectly dry: if it has droplets of moisture, they will begin to burn, and the dish will be spoiled. Do not neglect such trifles, otherwise a good steak will not be cooked. How much time to grill steaks depends on their thickness and the desired degree of roasting. Mine was 1.5 cm thick and I cooked them medium to medium for 2 minutes on one side, then turned over and fried another 1 minute on the other side. Fried medallions are removed from the pan, put on a plate and cover with foil or lid, so as not to cool. And now - the most interesting and spectacular. In a frying pan, where meat was roasted, put onions (if there is very little fat in the frying pan - add a little oil). Fry over medium heat for 3 minutes, stirring constantly, then add the garlic and fry for 2 more minutes. Then, while stirring the contents of the frying pan, we add Worcestershire sauce and mustard to it. And here it is, the crucial moment! Pour brandy (or cognac) into the frying pan and ignite it. Only very carefully - do not burn anything :) If you have an electric stove - set fire to a match, if gas - just tilt the frying pan, and the brandy will light up itself. Kitchen appliances you do not burn such a fire, and eyebrows for inexperience can podpalit, so keep your face away from the frying pan during incineration. Alcohol will burn for 20 seconds. When the brandy ceases to burn, mix the sauce thoroughly and cook it for another 1 minute over medium heat. Then add the fat cream in the pan and, if desired, the sauce. Reduce the heat and simmer the sauce over low heat until thick. Try salt and pepper - you might want to add a little. We return to the frying pan the fried steaks along with the sauce, which stood out, until they were covered with foil or lid (for this and covered). Stir, warm for 1-2 minutes and remove from heat. Everything, the steak "Diana" is ready! Traditionally it is served with baked potatoes. From drinks I recommend dark beer or red wine. Bon Appetit!
