With wet hands, form small balls (no more than placed in a tablespoon). Slightly flatten them on the palms. Fry in lean oil until a ruddy crust. Use a wide shovel, and then the cheesecakes will obediently roll over. And one more secret - the oil should be very hot when you put the first batch of cheese cakes in it. 3. You can stop at this - the cheese cakes are ready. They can be served on 2-3 pieces per serving with a spoonful of sour cream. Tasteful! 4. However, some mistresses go further - they fold the syrniki in a saucepan, dilute the sour cream with water until liquid, pour the curd and simmer them on low heat for 5-7 minutes.
